INGREDIENTS:
For Marination:
- Thai Eggplant - 350g
- Medium Onion - 1 (Sliced)
- Green Chillies - 2
- Crushed Chilli - ½ tsp
- Khasmiri Chilli Powder - ½ tsp
- Turmeric Powder - ½ tsp
- Salt - ½ tsp
- Medium Tomato - 1 (Sliced)
For Cooking :
- Oil - 3 tbsp
- Mustard Seeds - ½ tsp
- Fenugreek Seeds - ½ tsp
- Cumin Seeds - ½ tsp
- Curry Leaves
- Dried Red Chillies - 2
- Few Onions - (Sliced)
- Garlic - 3 (Sliced)
- Pepper Powder - ½ tsp
- Salt to taste
- Thick Coconut Milk - 100ml

Is it ok just to cut the eggplants? Is it important to smash it like that ? I tried this, smashed some and then felt horrible doing it to my beautiful homegrown eggplants! :) cut up the rest. But it was delicious in the end.

You can cut the eggplants if you want, but this type of Thai eggplant is more delicious when it’s smashed. Also, by smashing it, the seeds are more likely to be removed as the seeds are quite bitter. 😅

@@rinozasrecipes I guess the if I pick very tender ones, just cutting will be enough. For more mature ones, I guess smash them and get rid of the seeds. Smashing is easier than cutting for sure 😀 thank you! Made it again just now. Yet to try more of your recipes, especially Sri Lankan ones( I am originally from Kerala with deep connections for some of my relatives to Sri Lanka)
