__Ingredients (serves 8 as a side)__
For the beetroot yogurt dip
8 oz (225g) pre-cooked beetroot
7 Oz. (200 g) Greek yogurt
1 lemon (juiced)
1/4 cup extra virgin olive oil
1 tsp ground cumin
Salt & pepper (to taste)
__For the seasonal roast veg__
1 small butternut squash (or ½ a large one)
2 small white onions
1 red onion
2-3 carrots
Handful of fresh parsley (for garnish)
3-4 tablespoons extra virgin olive oil (2 for cooking, 2 for serving)
Selection of seeds and nuts (for garnish)
