Turron de Jijona ( Turron de Xixona) t is soft Spanish nougat made with almond paste, white eggs, and honey.
Ingredients:
300g of grilled ground almonds
200g of honey
100g of sugar
1 egg white.
Directions:
1/ In pan Heat honey and sugar
2/ Meanwhile whisk the egg white until it becomes firm
3/ Add the egg to mix honey sugar gently stirring constantly
( ideally off heat )
4/ Add the ground almonds and stir continuously until the mixture becomes thick
5/ Put in a mold lined with parchment paper
6/ Cool for 24 hours before cutting the Nougat.
N.B: You can add lemon zest or vanilla for flavor
You can use only honey without sugar ( this I guess the original recipe ) and in this case 300g of honey.
