Honestly, I haven't see anyone else add cinnamon to theirs but that's what make my mom's recipe so unique. It's really delicious!!! My mom is from St. Lucia and lived in the Virgin Islands most of her life. Perhaps her recipe is a Cruzan-Lucian recipe. LOL Feel free to try it and if you like cinnamon that's great but if you don't just follow the recipe without it. Enjoy!!!

These measurements were for a bag 5 lbs All purpose Gold Medel flour. Pour most of the flour in the bowl and save some in the bag (about 1/2 a pound) for when you are rolling the dough.

I don't doubt that this is Johnny Cake, and I'll admit Johnny Cake is made differently by many different Island and Country. But what VI is this from. I have never seen Johnny Cake made like this a day in my life, and I was born and raised in the Virgin Islands. Enjoy!!

I made some v.i johnny cake this morning. I have never seen nutmeg or cinnamon. I think that is called festivals. Each island is different. I will love to try it this way. Looks very interesting. I like to learn new things. Thanks,and may God continue to bless you.

I have never had VI Johnny cakes with cinnamon in them. This is not so. Also besides the frying many VI citizens now use the oven and BAKE them, which is even better....Health wise. :)

I can appreciate the love of watching your grandmother make this delightful concoction but I still won't know how to make it. If she doesn't measure that's fine but give some type of estimate. This is nice but not a tutorial at all. Hope grandma enjoys her visit. Hopefully you all are enjoying her homemade delicacies.
