Put a fender washer over the pilot bit, that way when the pilot goes through the base metal the hole saw can't grab and bend or break the pilot bit.

Could you share some tips for cutting through a painted fender or hood? What tools are best? Any prep work involved before cutting? Differences between cutting a hole vs an irregular shape? I'm trying to avoid messing up the paint.

Layer of painters tape before cutting can help. Use a hole saw, it’s usually easiest. Take your time
