How to make wild garlic pesto in 5 minutes

It’s the time of year to make wild garlic pesto! Ramsons (or wild garlic) is carpeting the floor of deciduous woodlands everywhere, here in the UK. This is a very easy wild food to identify… the white flowers are the key to easily making sure you have the right plant. One of the most straight forward (and delicious) recipes to make with it is a pesto, using cashew nuts, italian hard cheese and olive oil. Here’s a 5 minute ‘how to’.

Green innit? No, you're def not the sort of person to make a mistaken identity Mark. Yeah, you can smell it at a hundred paces! I'd recommend getting hold of a mixer, although some use a pestle and mortar with varying results. Enjoy that sun!
