It’s the time of year to make wild garlic pesto! Ramsons (or wild garlic) is carpeting the floor of deciduous woodlands everywhere, here in the UK. This is a very easy wild food to identify… the white flowers are the key to easily making sure you have the right plant. One of the most straight forward (and delicious) recipes to make with it is a pesto, using cashew nuts, italian hard cheese and olive oil. Here’s a 5 minute ‘how to’.
