Wild Garlic Salt.....WOW, just WOW! This tutorial on 'How To Make Wild Garlic Salt' will instantly make you popular in your household (and, lets be honest, whoever you gift it to....this makes a LOT).
Wild Garlic, a wild relative of the onion and widespread across Europe, is abundant at this time of year (March - the end of Spring). It is also an incredibly versatile ingredient: you can use it in salads, as a herb, boiled, fermented, used in soup, or in pesto.

However, for me, the way to use it that will guarantee that amazing wild garlic flavour all year round is this one: Wild Garlic Salt. It is also an incredibly easy recipe that (as long as you have access to Wild Garlic) shouldn't take you much longer than 10 mins to prepare! Truth be told, I found this recipe from the wizards at the Riverford Field Kitchen (check them out here: field kitchen.riverford.co.uk )
Ingredients:
• 800g Sea Salt (100g for the paste, 700g for the flavoured salt): my salt of choice is Maldon Sea Salt
• 100g Wild Garlic Leaves
Equipment Needed:
• A blender (I use my Nutribullet)
• 2 or 3 baking trays
• A big bowl
