Use a lint free cloth to apply the oil. Microfibre cloths catch the wood grain and drag in the surface.

How deep is your engraving and how do you keep the char from coming out of the engraving?

If you tried cutting on that, there would be a gap under the food, where the engraving is, and it will not cut there. I can't imagine trying to use it as a cutting board.
