Eat the pineapple, don’t toss it in, that will make it more like a juice. Tepache needs only the peel and sugar, if you have access to piloncillo or panela, the better. Don’t crush it, don’t micro it, just make sure the peels remain under the water. I’m a Mexican, I know my tepache. If you want to mix other interesting flavors on it: cínammon as you did, fresh orange peels. And you can wash the peel too if you feel like it, rub it with regular soap, no detergents, no liquid soap.

I make this all the time. I like Rick’s advice about the kind of pineapple to use. Some aren’t ripe enough so flavor will be weak. I like to pick the ripest ones, wash them with cold water and a little brush just to get some of the loose stuff from the peels. I only use Mexican cinnamon, and star anice for spices. I don’t use the whole pineapple, just the peels and the core. Add cold water, piloncillo, cover with a cheese cloth or kitchen towel and let it ferment for 4-5 days. Any longer and it starts to become vinegar. Pour over ice on a hot day and you will be glad you made it. Rick, did you know you can also use it to cook? My mom also uses a stronger version of tepache or chicha and makes an awesome chicken stew. She calls it “pollo en chicha” and it’s an interesting dish, full of flavor. Thanks for highlighting one of the oldest drinks in Latin America.

Was in the Navy in San Diego. Would see amber bottles of liquid of pineapple fermentation hanging. In some cases, they were making vinegar which would be used to lightly pickle the jalapeños, radish, carrots, and onion on the table where you were eating all over up and down Baja, Mexico.

Right. Sugar ferments to alcohol and alcohol ferments into vinegar. (Malt vinegar, white wine vinegar, etc.)

Couple of extra tips for tepache: you don't need to dissolve the piloncillo, you can just throw it whole in with the pineapple and the bacteria will do it for you. Also, aside from the mandatory cinnamon, cloves, allspice and star anise are welcome additions to this beverage, play around with those spices for a more personalized flavor

If you are having trouble getting the fermentation started, you could add some organic fruit such as grapes or apple. These typically still have their natral yeasts and bacteria.

I remember seeing tepache sold around the city I lived in. I don't think I ever tried it, though. I liked crema de coco, esp on a hot day.

Pineapples are filthy, always wash them if using the skin. Think of how far they travel and where they get stored along the way. Ur putting that in ur mouth lol
