Sir! The best marination and tenderizing ingredient is the kaali mirch(black pepper). Best and the simplest marination if someone is undecided what to cook is to add salt, black pepper and lemon juice. Let it sit in the marination and add rest of the stuff later on as a second marination. By mixing everything in the beginning, one is only reducing the potency of the main ingredients. What salt does is, make the mutton sweat and loose water, while lemon and pepper work as tenderizer. Lemon can be replaced with pineapple, raw pappya, kachari powder or the combination. Curd can also be the replacement of lemon in the mildest form. Again, as you said it depends upon the type of meat you are marinating, marination time will differ. My views and opinion.

1.Sir you can also use kiwi fruit as a tenderiser. 2.In fish, lemon juice is better than tomatoes. 3. I also add some mustard oil, after smoking it. Lastly, Bacteria hone ka "अंदेशा" hota hai, "संदेशा" nahin. 😊😃

Kiran ji jitna maine dekha hai mere father jaha thanda paani hota tha wahi rakhte the geela kapda lapet kar. Baaki aur bhi tareeke ho sakte hai.
