Like you I was tasked with this and ran into brick wall after brick wall. Eventually after a month of on and off trials (stubbornness) i also realized the many embedded Xen drivers were to blame and got it running (in my case 2012 R2) Then this week is got the task again and realized I forgot MOST of my learnings from that time. Your video here quickly got me back on track. Thanks a million and GREAT WORK!

A simpler method would have been to modify the registry to disable the Xen driver, so when the VM boots after the P2V is run, it will have a reg hive with disabled Xen drivers... Subsequently - you may need to make a change to the BCD prior to booting on ESX. I can provide you with the location if you wish.
