I think I painted them with Black Templar and then added some grey/blue highlights like Thunderhawk Blue and Fenrisian Grey

Could the same colour scheme work if I use eshin grey instead of wraithbone as the spray?

It might come out a bit darker. I would suggest priming with what you have and then drybrush heavily with a white color
