The holes are drilled to relieve the pressure or otherwise all the nutrient and moisture will push the the graft section upward and may even dislodge it. The tree will bleed through those holes

When is the best time to whip graft and can you use scion wood without storing it , to cut the scion wood and directly graft it to the rootstock?

Your said " we will also drill hole to aid in ------" (MY guess is to stop the top from bleeding which would prevent the graft from taking due to too much wetness under the tape causing mold )

So.... You're grafting an English walnut scion onto a black walnut rootstock? Or vise versa? Because it's more disease resistant or grows faster? Just curious

The old man is kind. But it's terrible to see this manner of grafting. It's very dangerous to use this "knife". On the other hand one have to cut once or twice, because grafting is not carving.
