The holes are drilled to relieve the pressure or otherwise all the nutrient and moisture will push the the graft section upward and may even dislodge it. The tree will bleed through those holes

The old man is kind. But it's terrible to see this manner of grafting. It's very dangerous to use this "knife". On the other hand one have to cut once or twice, because grafting is not carving.
