Jon, question: can you use an E flat 9 also the E flat 11( like a substitute)

Sure that would work. Just make sure whatever you play doesn't clash with the singer (the melody of the song) and you should be good.

I’ve Learned a version that doesn’t flow as well as I like. I’d be be very interested in an acoustic version.
