You skip over the 6th string open E as you should, but you strum the 1st string open E right at 2:03 and that's a note that doesn't belong in a B7. All you need to do is fret the 1st string at the 2nd fret with your 4th finger and the chord will sound just like the original Link Wray recording. It's an easy chord to play, and in fact that's the way most chord charts show a B7.
