I have started to teach my family members to can. This is one of the things I never fail to tell them. "It doesn't matter. It's a tool. (like some of my SIL's) It is not an engagement ring". I would NEVER have taken this on without the encouragement, faith that you instill in us, the NCFHP rules you remind us of, humour and errors, and your great ingredient canning lessons. Yes, wonderful description of what to do if things go wrong. I have had food poisoning. One horrible night on the bathroom floor wishing I could die. The food had come from a fast food joint, but all the same, ever since I have been very respectful of food safety. I have never heard of this recipe, but I think I will try it the next time pork goes on sale. I've found meals in a jar to go over rice or taters are great.

Mississippi pork TACOS oh my goodness! So good. Cook roast as usual, place cooked meat in shell of choice, (not the crunchy pre-shaped ones though) top with prepper jack or cheese or your choice, fold and pan fry until crisp. To with cilantro, taco sauce or picante and Enjoy!

One of my favorite things to can is Mississippi Pork Roast. However, I use lean pork loin because I just can't handle the fat. My only pressure canning mishap happened when my electric stove eye became dislodged during canning, and I had to start over. Once the processing finished, I let the pressure come down. Upon opening the lid of the canner, I noticed one of the jars had lost its lid and ring and contents were floating in the water. I removed another jar, and as soon as I sat the jar down on a towel the lid and ring blew off spewing the contents everywhere. Luckily I wasn't hit with any of it, but my poor kitchen was a mess! 😠

My main cooker runs off propane and I have two bottles and a changeover valve connected to each so that it will change over to the full tank automatically. Great little gadget if you don't have one and are relying on bottle gas for cooking.

I absolutely LOVE keeping canned Mississippi Pork on the shelves!!! That brine is most definitely essential. I like mine a little extra briney (is that a word??? lol) I need jars of just the brine to make sure I have enough.

Start over again?! Like the time my now 30 year old son was 6 and I was canning potatoes. I turned my back for a second (literally turned my back to the canner), and Matt pulled off the all metal jiggler. It was hot, of course, so he dropped it fast! I started to scold him but then realized he was hurt and instantly went from mad to my poor baby! After i attended to his thumb and held him for a while explaining to him about touching hot things, I did the potatoes from start again. He said he was just curious about it, and he still remembers doing it. Also, Matt and his wife are expecting their first baby in 11 days!!

Mishaps? Having a full canner load of tuna, the neighbors stop by, we visit. I forgot to set the timer for the venting, but saw the canner was gaining pressure. 20 minutes into the process the pressure dropped… i ran the thing dry while venting 🤦🏻♀️🤷🏻♀️. Cooled down and started over.

Hello Leisa and Phil, you both look so good! I ❤love your videos. I just finished my canning weekend 😂 now i have approximately 60 jars of ugly chicken, beef, pork and meatloaf! On Thursday i had a huge haul of all sorts of meat 20 to 40% sale! I have a question for all of you. How many days do you monitor the jars after canning. I leave them for fortnight on the counter and check ervery day before the storage. (Just in case something happens) Since i live in Austria i use twist-off jars or weck jars (no access to maison jars and far to expensive) all my jars are perfectly sealed. Btw all my friends love the ugly chicken salad or beef salad. I use the canned beef also for a indonesien dish called beef redang and it is so delicious and doesn't needs so long for cooking. I have an electric stove, so I don't start any canning projects if there is a chance the power could go out. That being said I had the power go out on a beautiful sunny day. It only went out for 2 minutes or so. I closely wa watched my gage, it didn't get past my pressure. I was lucky, I only had 17 minutes left.

If some jars seal when taking the lid off the canner, would you need to open the jars and reseat the lids and rings? . ... The gasket on my cooker went bad the other day. No jars sealed when the lid was removed, but I quickly put another pot lid on to keep the heat in because I feared they would seal. I've never had to restart the process before.

What do you do when you run out of propane? I'm used to the 20 pound tanks for bbq grills, but I know you've got a big chonky propane tank that hold a LOT more than 20 pounds. Do you have two different tanks and you switch between them? I'm confused and curious what you do when you completely run out of gas in the tank but still need to keep cooking before the "propane guy (or gal)" can come refill the tank.

Oh, what a bugger! That's no fun when the propane runs out. You need to add an auto splitter so it flips to the 2nd tank automatically. Sorry this happened to you.
