Is the built-in Windows Defender ('Virus & Threat Protection') adequate for personal use? If not, which anti-malware software would you recommend? I am quite tech-savvy so don't mind if it is a little complicated to set up.

Yes, it's what I use myself currently. It doesn't have some of the extra features you might find in others but it covers the basics pretty well without getting in your way too much.

So i just saw a video talking about how antiviruses open you up to a man in the middle attack.

Care to share the video? I can't think of a way that would be true of a standard antivirus as it shouldn't be doing anything that would interfere with authentication. If the same product was also doing web filtering and was poorly implemented then yes it could. I'm not a big fan of web filters for several reasons.
