I do this, but also quarter it when it’s about half thawed. Then dry brine it and continue thawing in the fridge until ready to cook.

Yes! Working with a semi-frozen bird makes it a whole lot easier to break down: easy, clean cuts (I like to spatchcock with sharp kitchen shears), and the liquid is held in place by the low temperature. That makes for a cleaner workspace and, more importantly, helps avoid a dry end result. Finish thawing in a dry spice rub with plenty of salt, rinse the excess, and roast. Love it.

A better way to do this, is to let the faucet running (not full blast but a light trickle). Running water will defrost it faster and it will use the same amount of water. Plus, you don't have to change the water!

A friend taught me this trick in college. It's the running of the water, not the temperature, that makes it defrost fastest

That's not going to keep it out of the danger zone though? Unless all of the turkey is fully covered in cold water the entire time? The point of this method is the turkey is submerged, so it's kept cool enough to not give you food poisoning

@@abijo5052 huh? You have running cold water on a frozen turkey, and you're worried about it getting too hot? Where is this heat you speak of coming from? The trickling cold water breaks the surface tension in the water, and moves it around slightly. The freezing cold water that was touching the turkey 2 seconds ago has now been pushed away and replaced by regular cold water. This constant displacement makes it defrost faster. It's the same concept as blowing on your food to cool it down, you replace the hot air around the food with less hot air from your mouth.

Also to add to that, still water will hold bacteria. It’s a food safety standard In restaurants to use running water.

I Nigeria, we just leave the pot in the sink and the water slowly running over it for a bit. Does the trick effectively. Just be sure the sink blockade is not in or get ready to go to bed on a strained back cos of all the water you got to clean up. Big fan BTW. 🙌🏾👊🏾✊🏾

In culinary classes they will teach you that you should always use the fridge method because 1. It's way simpler 2. It let's you focus on other meal prep if cooking a large amount of food and 3. It is considerably safer. The risk of contamination with either method is small enough that some people take the added risk, but in a commercial kitchen this would rarely be done.

PSA Do not be alarmed when you open the turkey and find out the inside is still a frozen filled hole. Put the bird shoulders down legs up and run cool water into the frozen area. Try to hit the ice directly. As it thaws out from the top youll be able to stick your hand inside of it deeper and deeper until you reach the other side. In the meantime you can direct the flow of running water with your hand with a 👋 waving motion. Once you finally get water flow out the shoulder side youre probably finished thawing out the turkey but i like to check every inch of the inside with my hand Without the running water for now this way you get a better sense of ice inside or if its just cold. You probably don't really need to run water longer than another 5-15 minutes if youre water is running through the bird at this point. I had to clutch thanksgiving two years in a row and rushing a defrost/thawing isn't fun at all. You gotta stay with the bird from beginning to end critical don't forget this unless you want Samanila or worse getting your babies or family or friends sick to death ☠️ please take this seriously for your sake and others Happy Turkey 🦃 Day

you can also leave a small trickle of water, it will help regulate the water temp to avoid the danger zone as well as create circulation to better transfer heat to the turkey from the water and you wont need to constantly change the water

The reason why you use cold water is because water at 15°C is 30°C warmer than -15°C, but it's easy to think of cold water as slightly less cold than a frozen turkey. Hot water can speed up bacterial growth.

Resturant cook here. If you fill the bucket all the way and then turn the tap down to a low flow, you'll allow the water to replace itself and will speed up even further. Just make sure not to splash water everywhere!

Something that works faster to thaw meat is doing exactly what he said but instead of pouring the water out a bunch of times it’s actually faster to have a small low trickle of water cause a flow of water. It causes the water to circulate as well as giving a constant new supply of water. It’s faster and does require you to pick up a full thing of water a bunch of times!

Cool video! If you want to go even faster and don't want to have to dump water you can just leave the faucet running cool water into the pot and overflowing it. This way you get some circulation in the pot and dilution of the chilled water!

You can also just make sure the water is slightly flowing and spilling over as it won’t allow it to increase in temperature. Faster than changing the water every 30 because the water gets cold too quickly

One of the best ways to defrost a turkey is to just straight up wet brine it! Basically the same technique, but you put salt, a little sugar, and flavours in the water and store it in the fridge. Still takes overnight (which ain't bad), but in exchange you get all the other benefits of brining, being moisture and flavour in the final product

I use this method and leave it overnight in a tub, in the sink. It's still a tad frozen inside, but manageable and when stuffed with warm dressing, it comes out delectable. I cook it with a tight tinfoil tent, 1 cup water in the bottom of a roasting pan. A 22+ lb bird for 6 hrs. @ 400°.

Also, if you can set the water to gently trickle into and out of the pan, that will keep the water moving which will also help.
