Sure, they could have just used all phillips screws. But engineers know more than you do, and that Torx screw was absolutely required and necessary.

No you may be low on Freon or have a blend door actuator problem.

You cannot change the cabin air filter in a 2019 Cadillac XTS. It is different than a 2018 Cadillac XTS

Not true...I have a 2019 XTS and just changed out the cabin filter. Video instruction is 100% correct. When all the screws are removed, you need to give the unit a pretty strong tug.....it took me a couple of tries. At 20,000 miles, mine was filthy.
