You should start the removal process (at the valve) for the same reason you end the refitting process. Pushing the valve in enables you to avoid pinching the tube when levering the tyre bead out of the rim. Most people repair their tubes, so there's just as much incentive to remove them with as much care as you fit them. Also, when you fit the partially inflated tube, seat it into the deep part of the rim so it stays out of the way and you don't need to "tuck it in" needlessly as you work your way around the wheel seating the bead. Apart from that, good job
