My question is how did you decide where to lay that chalk line?

I simply decided I wanted my trim to line up neatly with my row of bricks...and flipped the chalk line to a width slightly smaller than my trim width. 👍

Push the board up to the lowest point on the ceiling until it starts to touch, level it, then measured the distance it hangs down from its final placement. That measurement is your "packer" size, which you can cut out of scrap wood.
