In my opinion, using avocado oil may be the best oil for seasoning cast iron. Today's video Mr. Cast Iron shows you how to season a cast iron skillet with avocado oil. One of the benefits of avocado oil is the higher smoke point. Avocado oil has a smoke point of around 520 F, and for that reason, avocado oil is a very good choice. In addition, I can get an ideal base layer on my seasoning when I use avocado oil.

That's great! Thank you for giving me a great simple, nicely to the point with all the facts I needed. I really enjoyed that. I just bought my first cast iron skillet ever and I cannot wait to season it with Avocado Oil and start sizzling some goodness onto it. I bought the 10.5" Lodge Skillet from Walmart. It's big enough for me to cook 2 steaks or what I need for my small family without being too heavy. Cast Iron is heavy enough without going too large. Might get myself an 8" as well in future. Maybe I'll find one at a yard sale or flea market this Summer. Thanks a bunch!

I've got an eight incher in the oven right now on its 4th coat of avocado oil. Can't wait to try it out. I rescued it from my son's room. He left it behind when he moved out. I was never much of an expert on anything to do with cast iron, I am very hopeful! Thanks for the video!

I have always used crisco when maintaining my season but to deep season i have always used grapeseed oil. I have never had a problem. Thanks for your informative videos. Blessings! Julie😃

I bought some avocado oil and plan to do all my cast iron ( skillets, pans, press and dutch oven all at the same time. Haven't had a chance yet but I want to kind of start over and do then all fresh...and CORRECTLY!!@@MrCastIron

Hi Mike! Great video buddy!! Avacado oil is a great one to use for cooking, it’s a “good” healthy fat, and like you said, it makes for a good seasoning oil due to high smoke point. Yes, you do unless you want to start cooking in it and build your layers of seasoning like that, which is perfectly fine, by the way!

Hi Mike, I used Avocado Oil to season my enamel Dutch Oven. It look great but it's sticky. Any idea what may have caused that? Thank you😊

Enameled really doesn’t need seasoning like a regular cast iron skillet or dutch oven. But, if it is sticky, it may be that a little too much oil was used and it was not heated hot enough or long enough. Possibly a combination of these. I wouldn’t add any more oil but try heating it again. I hope this helps you. Let me know how it turns out, ok!!??

I see some videos which claim you need to pre-heat the pan before applying oil. Is this at all true, or can you just go in in cold and put it in th hot oven?

Hey Robin! Thanks for a great question! In my opinion, you can do it either way. The real key to seasoning is applying a very thin layer at a time. So either way, you do it; just be sure and wipe out all excess oil that you can, or your cast iron will be sticky. I hope this helps you!

Thank you, Mike. As I understand it, cast iron is porous and to open up those pores so that the cookware absorbs the oil, it's best to warm up the cast iron before applying the oil. I agree, avocado oil is the absolute best oil because whatever we use to season the cookware, it will leach into the food, which means it should be healthy for us. I also agree, washing beforehand is important, but shouldn't it then go in the oven to dry completely before applying the oil? Just sayin'

After washing with water, aren’t you suppose to heat it a little to evaporate any moisture, so it doesn’t get trapped under the oil? Then once warm, oil.

Great question, Rob! Yes, you certainly can do it that way, too, and I sometimes do. But once I towel dry it, I like to get a little oil on it to prevent flash rust which can happen almost immediately when exposed to water and air. Since oil and water do not mix, even if there is some moisture under the oil, it will quickly evaporate as it heats up, allowing the oil to start the polymerization process.

I have seen videos before where they heat the skillet first... some say it helps the skillet accept the seasoning better and then put it in the oven. But I notice you don't do that, cold skillet then the oven. Have you tried both ways and found this works best for you? Just wondering... Thanks for all your tips!

Great question, James! I’ve found you can do it either way. As the skillet warms up, the oil begins to penetrate the iron. However you choose to do this, you must remove excess oil to prevent the skillet from becoming sticky. When too much oil remains, it inhibits the polymerization process or bonding of the oil to the iron. I hope this helps! Have a great day, my friend!

@mrcastiron I’ve been watching a bunch of videos and reading articles from Lodge and others and most of them say you have to exceed the smoke point of whatever oil you use for the polymerization chemical reaction to occur. Did your pan here polymerize properly given you set the oven quite a bit lower then the 520°F smoke point? Thank you!

I baked in a convection oven at 400°F but had smoke coming off my cast irons (an 8" and 12"). Was this because I may not have gotten all the goop off or is a little smoke normal?

Yeah, it was probably both. A little too much oil and a little smoke are normal because it is baking it into the skillet. A fan or adequate ventilation helps when seasoning cast iron. Certain oils just seem to smoke more than others too!

The quality of oil could have something to do with that also. Like everything else, not all avocado oils are the same. You want to look for high smoke point, cold pressed.

I am new in cast iron, I have a question I season my cast iron with coconut oil no flavor, what happend if I put a new coats of avocado oil a 520 degrees with the old layers of coconut?

Thank you, Carlos, for a great question, my friend! If you cook with avocado oil on top of the coconut oil, it should not make any difference other than adding additional layers of seasoning to your cast iron.

I stripped and seasoned a lodge skillet with avocado oil and it came out with speckles that didn’t season???? I wiped with oil. Wiped off excess and baked for 1 hour at 550 degrees. Strange that the speckles continued to get deeper each round of seasoning. Seasoned 4 times. What causes this?

Too hot. Go lower on the heat. 450 max, not 550. Keep making sure the coating is thin.

@Collin4486 💯% yes. 550 is way too hot, and the layer of oil must be very, very thin. It's as if you're putting a layer on and then immediately wiping it all off before putting it in the oven -- but a small residue remains and that slight residue is what gets baked on.

Yeah, Bill, sometimes it takes a few rounds of seasoning to get them to blacken up. Just keep cooking in them, and it will level out!

What temperature did you have your oven set to? I remember I seasoned a cast iron with avocado oil in a grill that was too hot, which essentially burned off all the oil instead of sticking it on as seasoning. It was also completely grey. It could also be that your oil is old, which decreases the smoke point -- causing the same problem.

Hey, thanks for the question! I still use bacon grease when cooking, but I like Avocado oil too. There are about three or four different oils I like to season a cast iron skillet with. Bacon grease, Avocado oil, Crisco, and grapeseed oil.

From what I've learned, when you originally season a pan (after stripping), it is important to use a plant based oil, rather than meat based. After it gets that protection, you can go to bacon, etc.

@Tammie Schnall, thanks for sharing this with us, my friend! When I strip a piece of cast iron, I like to use Crisco. It’s cheap and easy to get at the grocery store, and it doesn’t stink the house up when I’m baking it in the oven! It keeps the wife off of my back, too, lol!

Thanks Mike. Good video. Mike I made a mistake. I cleaned my 10 inch Lodge after a use. I oiled it up and put it on the stove and forgot about it. I got extremely hot. When I got to it it it had a white spot right in the middle of the skillet. If I season it will the white eventually blend in with the rest of the skillet?

Thanks, Larry! I hate to hear that about your skillet, but you should be able to fix it. It should blend back in, but if it doesn’t, you might take some steel wool to it and kind of rough up that spot a little. Wash it and season it again. Let me know how that goes, ok!?

Well buddy I got a question. I started using avocado oil a while back and after using it to fry an egg my old 6 inch egg frying pan a few times it started sticking bad . What did i do wrong?

Thanks, Hillbilly, and that’s a great question! Usually, when something sticks in cast iron, it is from too high heat or not enough oil. I usually only cook on medium to medium-high heat. You may want to check those and see if that makes a difference.

I didnt write that quite right I seasoned it with avocado oil the tried cooking in it. I done 450 for 1 hr. But still tacky. I think I just should have let it go longer

Oh ok. Yeah, I’d do it one or two more times without adding more oil if it is sticky.

I knew I'd find my answer, I seasoned mine in the oven and iT was,sticky I. The middle. So back in the oven no oil and hopefully it'll be good. I'm a begginer with cast iron. I've made all the mistakes. I wash and towel dry, then oil. Now I know to dry and go to stove top then oil. I use avocado oil, so got that right. Yay🙂

Wait. Under smoke point? Why so? Doesn't that mean it won't really harden up?

@@MrCastIron good to hear it causes no problems for you! Does it effect how long the seasoning last at all? I'm new to cast iron, so I have a lot of questions and everyone seems to do something different. It seems using cast iron is more of an art than a science.

I've having an issue with my new cast iron...I've gone through a full seasoning process, which means 4-5 layers each seasoning process and every time my pan starts to flake in the middle of the pan and is no longer non-stick. Ive used olive oil, avocado oil and vegetable oil. I don't understand what's happening. I've tried baking it for an hour on 300°, 400° and 500° and the same flaking keeps happening. I don't wash it with soap and I only use rubber utensils in the pan. Can you help?

I hate to hear you’re having trouble with your cast iron skillet. What you could probably do if you’ve already got several coats of seasoning on it is just going ahead and start cooking like french fries or deep-fried chicken. Fry onions and bell peppers, or bake a pan of cornbread in it. All those things will help to season your cast iron even more. Another thing, too, is once you cook in your cast iron, you could turn it upside down and bake it in the oven at 450° without adding any extra oil to it. Just Wash it and clean it however you usually do, and then bake it off a couple of times, which should help stop the flaking. @@MrCastIron I will try that. Thanks for the tips! Do you know what causes the seasoning to flake though? Baking it at too high a temperature or too thick of oil coatings?

Your welcome! High temperatures won’t cause it, so it could be the difference in oils. My favorite oils are Crisco, avocado, grapeseed, lard, and bacon grease. I feel it will correct itself by cooking and deep-frying in it, though!

@@papawnanasaveslovesnlife9530 no it didn't work. I have a smaller 10 inch cast iron that has no issues at all and I put this larger pan away. I've tried so many times and nothing seems to work.

But it so worth it. The taste from cast iron is second to none. So much better than the skillets treated with non-stick chemicals.

FWIW, to those watching this vid, please consider that this isn't 'great' guidance on seasoning, rather just one person's viewpoint. The irony, is that what his YT 'title' is.... Additionally, the end 'result' @5:53 is a false pretense I respectfully contend. That, is not a 'finished' pan, rather a freshly oiled one. Hey, it's a free country, I get it; and I don't mean to put this in a negative light but the 'guidance' here is riddled with bullet holes for a seasoning process and I have to call it out because it's misinformation like this that leaves people in confusion. Just look at the plethora of comments below for proof. I present this strictly as constructive criticism, and don't wish any disrespect on this attempted guidance.

I appreciate you sharing your thoughts with us, my friend. But the truth is everyone has their own opinions of how to season cast iron. This is just one more. As anyone can see, this actually looks pretty good. It is NOT just an oily pan. It was baked on, as I described in the video. Is it perfect? No. Does it work? Yes, it does. And furthermore, I do take offense that you would suggest that I am misleading people. I tell the truth, and I demonstrate the truth in every video we create. Ask any of our followers, and I’m confident they will testify that all we do on this channel is to help everyone enjoy cooking in and caring for their cast iron! Have a great and thanks for “your opinion”!

Can you point out specifically what you believe to be incorrect or misinformation in this video? What are these 'bullet holes' you speak of? This seems perfectly in line with what I'm seeing and reading from other videos and articles about how to season your cast iron skillet. I, for one, appreciate his quick take.
