Thank you so much for this video. And it’s perfect timing. I have a full packer in the freezer that I’m going to once again attempt to SV/smoke the flat and then make corned beef out of the point. Never in my life would I have thought that’s how you separate a flat from the point. I just figured you just cut it in half. I always learn so much from your videos and your posts. Thanks for this! I have a full packer in the freezer I need to separate. Want to do burnt ends from the point and pastrami from the flat
