Google's Family Link has some pretty good features to remotely control your child's phone. Though Screen time app may be a bit more restrictive however. I've been curious about using both for one phone, as that seems to cover all controls.

Do you go to the Family member's Screen Time you are trying to edit or do you do it through your Screen Time settings?

Yes should work for incognito. If you’re really concerned with your child’s search history, your internet provider can show you everything they have ever searched even if they delete history or use incognito

What if i want to pass down my old phone to my child but it does not allow me to restart the process of choosing if its my phone or my childs how do i restart it again ? Cuz it doesnt appear anymore abd im trying to set it up for my child but it does not allow me too

Have you tried factory reset? That will wipe the phone completely and start fresh
