I changed the scandi grind on my utility knives to a convex grind. Even on a cheap Bahco knife, it makes a big difference. This video gives me a simple, quick, and effective way to maintain this kind of edge. The way I was doing it, would eventually take it back to a scandi grind, but much wider. This was very helpful. I have spent hours trying to sharpen flat grind knives over the years, spent dozens of hours watching videos, and a couple of hundred dollars on diamond stones and other sharpening devices. But, I could never maintain consistent sharpening angles. Therefore, I would sharpen a knife successfully on one go, and blunt the blade the next. It is as you say, for those blades, you have to sharpen like a machine. The convex grind is simple and repeatable, as it is a natural motion for our bodies. So simple that it should have been obvious.

@@darylbrenton4839 I agree 100%! I’ve heard some people say convex is hard to sharpen, but it’s just objectively not. You can be less precise with sharpening convex and still do it right.

What grit stone/sandpaper do you recommend?

Hey!! When I really doing a thorough sharpen I will do 220, 400, 600, 1000 (and that’s kind of hasty but that’s what I do) 400 would be a good maintaining paper to repair minor dings and also leave a nice sharp edge. Then for the stone use a fine Arkansas stone.

@@jaredleland6667 Hey Jared! If you don’t , mind I’ll make a suggestion here. The DC3 is a great stone, and while you’ll be able to use it to sharpen a convex edge, it won’t work well for establishing a convex edge. If you want to put one on your ESEE I’d say, get 50, 100, 220, 400, 600, 800, 1000 grit sand paper and something soft to place them on (mouse pad is idea). Lube that 50 grit (or 60 or whatever you have) up with wd50 and then start gently, but firmly “sharpening” the knife, BUT do it right ABOVE the relief edge. SO you won’t actually be taking any steal off the edge at all right now. All you’re going to be doing is knocking off the angle where the knife transitions from the full flat grind to the cutting edge. You’re looking to soften the transition from the full flat to the cutting edge which will establish your convex edge and also get rid of a bunch of unneeded steel that hinders cutting. Once you’ve done that, do the same with the 100 with more pressure, and then the same with the 220. At this point you should start to see a shiny convex edge appearing, and that polished steel should cover say 1/4” or so from the edge. so, essentially what was just a tiny edge bevel that was straight has now transformed into a 1/4” edge bevel that is conveyed. Once that’s established, hit the whole shiny part with a sharpie and start into the 400 grit, ensuring that you’re evenly removing the sharpie as you sharpen the blade on the paper. Keep doing that up to 1000 and then polish and you’ll have a world-class convex edge. I did it to my Cold Steel Espada and it completely changed the blade, it’s a fantastic cutter now.
