I come from a family of butchers going back to 1920 in western NSW. Not sure about the negative comments, I found the video very helpful. I cut 25mm Wagyu 6-7 steaks whole rump wholesale, 3 X 350gms out of 1 slice and vacuum sealed them. works for me for $$ and convenience. thanks again.

Id like to see what is a tidy way to then divide those slices into smaller servings. Just cutting through them into square slabs seems so wrong.

The small pice of meat on top of rump is better then. In Brazil we call this cut of steak do açougueiro (butcher's steak)
