How come you don't use the 2 probes that came with the unit? They've been shown to be accurate. And the unit would probably adjust better to the results it's receiving from the probes

I'm too chicken to spatchcock a turkey LOL. I have a bunch of turkey drumsticks though that I want to smoke tomorrow. Would I keep the temp at 350 and pull it at 160 or is it longer for legs?

I’d go a bit longer for the legs. I like to take them to 175 or so.

I’m going to smoke a 7 lb turkey breast. How long should I smoke it and at what temp?? I know how long to smoke turkey wings but not a bone-in breast. BTW I do have a Meater probe.

The thought of spatchcocking the bird scares me a little. I don’t have the tools I need, and I can see myself making a total mess of it. I won’t try it for Thanksgiving because I stuff my turkey with my delicious cornbread sausage dressing. I will try smoking a small turkey at some point.

I’d keep it to 10-12 lbs. mine barely didn’t fit. Didn’t take much to chop the knuckles off.
