I know some people pre-soak these to desalinate. I assume you didn't do this? Is that even needed? Thanks for your input! Great video!

I did not do that on this because i was short on time and it wasnt too salty but I would still suggest to pre soak if you can

once smoked Corned beef is then pastrami.

Im no expert but isnt this pastrami and not corned beef? I thought corned beef was boiled and pastrami was baked or smoked. Remember, I said I aint no expert.

As a lot of people have commented, yes, this technically is pastrami. I purchased a pre brined brisket labeled as "corned beef" but turned it into pastrami (which I think is much better anyway). Thank you everyone for the comments and insight into the corned beef vs pastrami

Very true, it was purchased as a corned beef and smoked like a pastrami
