Hi, I have a question. How you guys control the “overgrowth” of the dough? Because every time I make pizza dough recipe says let it rest for 1-2 hours, but after just 1 hour dough triples in size and if for some reason I wait longer dough keeps rising and rising. I use 40% poolish btw.

You will find it hard to create perfect round pizzas if you let the doughs touch each other like that. Always keep refrigerated and warm them slightly before slapping.
