I don’t get how to team fight with a mage like should focus the tank and try to get the carries if they misposition ?

Depends on the mage you play but yeah, you can stay on the tank but ideally with Syndra / Veigar / Swain etc, you want to create space in the teamfight and try to zone enemy carries while your team does damage!
