Not sure what these comments are getting at, I could totally see the second loaf pop back quickly! It’s a good test!

Can you put a video up from start to finish of making sd bread? I also need to know what utensils I need. I’m making it for probiotic effects.

There are no live probiotics in sourdough after baking it. Sourdough is thought to be better than regular white bread for gut health though. Sourdough breads nutrients are more bioavailabile due to the breakdown of these nutrients when fermenting. It also has a lower glycemic index than regular white bread. If you want the pre/probiotics eat yogurt, kimchee, and other fermented but not cooked foods.

How is 24 hours "over nighr"?

Sorry, but your second poke on the first loaf was EXACTLY the same outcome as the poke test on the second loaf. I watched several times and they are identical in every way. This is why I don't like the finger poke test. Way too subjective and people seem to ignore the results.

I’ve never found the poke test to be accurate at all, at least with sourdough. My own experience talking.

I don't disagree with you, but it would be much more helpful if you offered a more valid test for knowing when dough is finished proofing.

@@luke9822 I taste it. I’ve done it long enough to know. Can’t teach that.

@@SparkyOne549 if it's something you've learned over time based on the dough getting to a particular stage - and it's actually a valid test that can be compared to other methods - then yes, it can be taught. Teaching is hard though.

@@luke9822 Right. You can’t teach how to feel, tasting is individual also, so is smell.
