I did run into an issue after testing the upgraded OS. The Macbook Pro doesn't use the built-in display and then it has also dropped wi-fi support. Not sure if this is a common issue, or if I just need to go back to the Monterey OS...

Somethings work ok, some things are unsupported for a reason. Mac Pro's (5,1) are fine - my SATA SSD works, R570 graphics are more than capable, you can probably boot and switch to NVME for more performance. Dual X5690's are adequate, but single thread is still quite low. They do kick out a lot of heat. Dual-core i5 / 8G RAM Macbook Pro from 2011 is pretty much unusable on Sequoia, even though it technically executes. I am struggling to see a use-case apart from, "that's cool" or you have a grandparent with a mac pro who doesn't want more. Unless you have a large software investment, I'd be looking for cheap, supported intel mac or M1.

Make sure you are using an SSD and have the maximum possible RAM installed.

Upgrade Ram(If having physical slots) + a decent SSD will get the job done.

Hello, I have a question, I have a late 2012 iMac and if I go to the App Store on it, it says that my version of MacOS is compatible for the newest operating system. But if I go to click on it, it will open my settings and check for updates and then says that there are no updates. So my question is, if I create a bootable drive using a newer Mac that can handle the latest software can I put a bootable drive onto a usb flash drive and then take it over to my late 2012 iMac to install the latest software on it?
