My Father-in-law passed last May and I have been put in charge of the Turkey for Thanksgiving. It will be my Mother-in-laws first Thanksgiving and Christmas without her Husband so I am going to channel his spirit and try to cook the turkey on his BGE. Great video and tips. I'm, sure I will be back for more guidance.

I’ve been playing with charcoal amounts. And 1 chimney full plus a double handful is plenty to cook slow for 3-1/2 hours. If I fill it full like you did trying to keep low temps is work. They are so efficient. I only use 1 starter under the chimney and don’t let it get too hot. 2 wads of old newspaper is plenty to get it going nice and free. Otherwise it will be over temp in 5 minutes. I leave the coals in a slight mound and let fire spread from there. A metal bucket a wire charcoal basket is a simple set that everyone should have for any Kamado red green black Ect. I asked multiple Kamado video producers for help with fire size questions and never got a response. That left over charcoal may be out in 10 minutes but hot for much much longer.

Glad I found this video brother! Just got a large green egg on stand with wheels. Won on a auction for excellent price and in near perfect shape. It does have daisy wheel and thank you so much for the tip on that and the charcoal situation. Cooked once on it and worked great cant wait to smoke in it. This video definitely explained in detail to perfection on how to work it. Thanks.🏆

Great tips on cleaning out the BGE. It took me a while to realize you have to pull the fire ring. You can get a lot of ash buildup there.

I’ve got an old heat gun that works fabulously for lighting the lump coal. Position at the 12, 3, 6, and 9 o’clock positions for about 1 minutes each until sparks start to fly. You could buy the heat guns from green egg but I had one sitting around for years not getting much use and gave it a new purpose.

You provide great information and instruction. So once I have my fire lie, at what point do I close the lid to get it up to the intended hold temperature?

You just sort of play it by eye. When it seems you have a decent fire going, close it down and start adjusting the vents.

Very informative video for us first time BGE owners. Just broke out my large BGE, set temp tp 225 for smoking some pork ribs. The ribs were on the smoker for 3.5 hrs but never got that awesome looking bark I've seen on your videos. Any tips? Thanks

Hey Ron, I'm glad you're getting some good info out of these. We will have a ribs video coming out in the next few weeks but until then, 3 1/2 hours at 225 is definitely not long enough. If you bump that temp to 275-300, it may work better in that amount of time. Look up 3-2-1method for ribs.

Great video! I have a question on the charcoal amount you recommend. Do you let all of the charcoal completely light regardless if you are grilling or smoking? Or do you start the one spot for the smoking and let that burn around the charcoal basket. Thank you!

I have a Smoke Remote BBQ Alarm Thermometer that you probably know has two probes - one that goes in the meat and one that monitors the temp in the grill. Can I use this in the BGE? I guess don't drill a hole in it but rather put it in between the top and bottom???

Yes sir, that would be exactly how to do it. Also, make sure your wires are going through above one of the tabs on the conveggtor. It will protect the wires from burning out.

I personally use it whenever I am lighting the grill. Whether I am smoking or grilling, it is a great way to get it going.

Awesome video. Love it like all your others. Do you use a special filter or just the stock one on your shop vac? Do you notice any ash flying out the vent as you do it or if you use the vac later on for something else?

Yesterday was the first time I ever saw a big green egg in person. I saw it at an Ace hardwear store here in Aurora, Colorado. The employee was phenomenal in telling me about the Big Green Egg, he showed my quit a few things about it and showed me some of the extras as well. I have seen the big green egg on a PBS show called Bar-Becue U. And nother thing my wife and I went to our favorite meetshop called Sams meets also here in Aurora Colorado and I asked the butcher what non gas grill should I buy and He said The Big Green Egg. So when it is a good time to buy one I'm going back to the Ace hardware store and get one. Thank you.

Great info. Question... Top vent vs. Bottom vent temperature control. Does one impart more smoke than the other? I would imagine controlling with the bottom vent keeps smoke within the kettle longer. I grew up with my pops always cooking on the Weber kettle, and I can almost smell this video! I cook outdoors on a griddle now, but may have to pick up a small kamado now!

Great question! For me, I find that if I am controlling the temp with the TOP vent, it makes the food smokier. It allows less air out at the top, therefore the smoke tends to sit on the food for longer periods of time.

Yes, i agree. The bag filter is a game changer. I used to have to point the exhaust on the shop vac to the outside so everything on the patio wouldn't get covered!

I am buying a house and getting a big green egg as part of the deal. Never used one before but been using an offset Texas smoker for 30 years. How long will the amount of charcoal that you begin with last if cooking at 225 degrees?

My food always turnout tasting too smoky. Any suggestions. I have an XL BGE and want to use it more, but so far, I'm not liking the smoky flavor. 😳

First, what brand charcoal are you using? FOGO is known to have a very mellow flavor so as not to over smoke the food. Next, control your temps using the bottom vent and keep the top vent wide open. This prevents the smoke from sitting on the meat for too long and allows it to just roll over the meat.

@@FOGOcharcoal I've tried a few lump charcoals so far. The BGE ones that we got with the purchase and then a few other ones. Of those I've tried, the Cowboy one seems to be the least smokey. I'm going to try the top vent wide open though. I usually regulate the temp using both.

Put a lot of charcoal you don’t want to run out and have to refill it and take it all apart. Then he says you can shut it off with left over charcoal because it want use it all🤪

By looking at you nest it's clear something is not right, like many people have been given the egg in that situation and had no control of it. Yet some chose to grill and cook on BGE using some ways they did in their previous grills and pits and Green Egg don't work like that That is why it has a lifetime insurance because it will do exactly like it's supposed to, so when the walls are black it's clear that wrong charcoal, additives like liquid fluid and other lighters have been used. Thus it becomes contaminated, no shirt cuts for this equipment use Green Egg charcoal and use Green Egg lighter. I will admit my pockets are usually empty and I used wrong charcoal and wrong lighter. Even though I did that once my nest got contaminated and wall became black instantly. It really broke my heart because at the store they did tell me exactly what to do but I listened to my stomach and had no money to replenish with correct charcoal and lighter. These Eggs cost a Lil more for me so I messed up big time and it pained my heart each time looking at it. I could not lie because I messed it up and desposed it I am not saying thus from a vacuum but share so many will not do what I did. Even one of my cars only take premium or it will not start at all and made a mistake at the pump one day and it did not move, so I had to pay towtruck, take it to the shop and time lost.

@@blanket7126 My friend, the walls in it are supposed to turn black. You are burning fire in it. It is the same with any grill or smoker. Also, the nest is what the Egg sits in. Trust me, no lighter fluid or wrong charcoal has ever been used in any of my Eggs.

I don’t doubt they are great grills to use but they have gotten too expensive. Unless you live in a winter climate they are not worth that price. Being made in Mexico to start with at that price you expect an all American made.

I guess that is where the best ceramics are from what I understand. Also, they have a full life time warranty. They aren't fr everyone. We also just started a Weber Kettle series that comes out every Friday!

FOGO Charcoal I have a custom built pit . Even in the snow it grills good. Sure I can buy one of those but I got rid of my smaller one because I couldn’t get everything ready at one time with the timing. We have children that always want something different. It’s no doubt a nice grill and I can afford any of them but mine is just right for me . I had it built for the number of people who are here and what I needed. You enjoy this spring cooking.

The only commercial-size production Kiln that gets HOT enough in North America is in Mexico. The BGE Ceramic mix is very specific.

This grill is honestly the biggest piece of shit I have used. I have a cheap charcoal grill that sits beside it that works better. No matter what coals you use, they will heat up unevenly, no matter much fire starter you use or what orientation they are either. Patches of cold on the grill, constantly. No matter how much you mix. If a goddamn grill is this hard to use, keep the fucking thing. I have used mine for about a year and would probably give it to someone if they wanted it

It's all a matter of preference. This is just how I choose to do it. It's not to say that it's the best way, just how I have found it to work best for me.

Great BBQ very expensive, I have owned one for over 8 years after being conned by my wife during a severe hangover that we 'really' one of these. Honestly haven't regretted it BUT now really offended by the prices Green Egg seem to think they can charge their customers for 'add ons' some of which are really taking the piss. Green Egg get a reality check and look at the prices you are charging for a table etc which you could get made professionally for a tenth of the price. Nice BBQ well over priced!

The BGE is a total waste of money. The Weber Kamado has the same performance for $1000 less and doesn't have all the quality problems of the BGE

I use a small rechargeable USB fan, while the fire starters are going that can spread the flames all over very quickly saves about 10 minutes or so, and no failures, I am probably guilty of not cleaning my egg often enough maybe the airflow is a little low but this does the trick and I did a 12 hour pork shoulder burn the other day it was fabulous

Great video. I don’t know why but it kind of drives me nuts that BGE doesn’t come with a conveggtor when you purchase the initial Egg. What are your thoughts on a high temp burn to clean the Egg?
