Back in 2002 my mother was battling cancer and I took over her bill paying and shopping. I was shocked to discover how little she was surviving on. She lived in subsidized senior housing but had less than $100.00 each month to pay for all of her other expenses including pills, basic cable, food and transportation. It is good to remember that no one is giving our seniors any extra money just because of inflation and they will often have to do without. Find ways to help them without even mentioning that they may "need" a bit extra. A loaf of bread, a small casserole even some sweet treats. Many of them are too proud to ask for help but we can give it to them in such a way that we do not insult them. You are such a help during these times when everything is so darn expensive. Thank you! P.S. Now I am a senior. I just realized that...haaaaa!!!!!

I'm 75, I so understand your dear late mothers situation, It maddens me that more programs are not available for seniors, I don't qualify for senior snap because they used unrealistic figures back in 1964 when the program was instituted. Homeowners taxes should be cancelled at 62 but they are not, every senior should qualify for meals on wheels, however meals on wheels are not available in my state, I never thought I'd be broke in my retirement but I had preexisting conditions and I had 400,000 worth of lung surgery in 2004 which I had to pay in full. So in 2004 I had to apply for social security disability. The food bank is 30 miles round trip, you have to first go to a place in town and fill out paperwork that's a $30.00 cab ride and the foodbank is a $70. cab ride and I have food allergies and they don't have a $100 worth of food I can eat with severe food allergies, our country doesn't care about seniors. I'm so sorry your mother had such a hard time.

I am a teacher that loves to bake. I seem to have the extra time in the summer so this summer I challenged myself to find items that were just sitting in my pantry not being used as the basis for desserts. Just some examples - the last 1/4 cup of molasses sitting in there turned into chewy molasses cookies. Oatmeal packets became muffins and cookies. The last bit of marshmallow fluff transformed into flutternutter cookies. Instant chocolate pudding and leftover graham crackers became chocolate pie. It was so much fun and so satisfying to not waste the items that no one was touching anymore. And the family loved everything!

I buy a jar of pickled beets at the grocery store, I eat them fairly quick. After they are gone, I boil eggs , peel them and place them in the pickle juice. After a day, I take the eggs and slice them and surround my salad with them. They are delicious and very pretty. I keep the eggs up to four days in the jar. ☺️

To make your own pickled beets just take a can of beets, strain off the liquid & save. Take equal amounts of beet liquid, apple cider vinegar & sugar & bring to a boil stirring to dissolve the sugar. Add pieces of cinnamon sticks & cloves if you want them spiced. Pour over the beets, cover & store in the fridge. It's also good with sliced onions in it.

I started using that idea of putting leftovers front and center in the fridge on the top shelf about 9 months ago, and it is really helping to curb food waste. Just today for lunch we had a leftover smorgasbord to clear out the top shelf in preparation for the cooking I will do for the weekend. Thankfully, my husband doesn't mind eating leftovers, so that helps.

My hubby willingly eats leftovers too, even if it's rather odd combinations. I'm putting away the red, white, blue decor a bit at a time, and have an "apple theme" displayed now. Real fall items are displayed a week after Labor Day. Cute candle! May try the granola recipe.

We love pasta with a cold sauce and we add some leaves of rucola (rocket?) to it. I make home made pesto out of nearly every leaves I can get. Greens of carrots with almonds, greens of radish with hazelnuts, rucola leaves with pistacchio. I add some yeast flakes for the cheesy taste, salt and pepper and our own olive oil. No one can afford pine seeds. The leaves of young beetroot go right into the salad, the cooked stems are served with a bechiamella sauce. Older leaves are cooked and used like spinach in dhals, in spring rolls, in tortillas.

When I have an abundance of tomatoes small and large I puree them in a blender until the skins and seeds are pulverized. I bag the puree and freeze. Take some out in the winter as a base for tomato soup and the taste is nothing like canned soup...so fresh. Just add a little dairy and some seasonings and its the best thing ever, especially after cleaning up snow. The cherry type also make make great dried tomatoes in a dehydrator. You can even powder the dried tomatoes in a coffee grinder and the tomato powder has a stronger concentrated taste and works like tomato paste in cooking. You can often get dehydrators cheap and they are worth the price, even new, for drying extra produce, herbs and even fruit purees for fruit leather.

I don't decorate except for Christmas but I strongly agree with your thoughts on let's keep the seasons where they should be. If it's still summer, don't decorate for fall. If it's not even December yet, don't decorate for Christmas. As for the seniors and others in need in our lives, I think those who have should make a double batch and bring the second part to those who haven't. As someone else referred to, it's not just a question of using the food bank, it's a question of can someone even get there? We need to keep an eye out for each other. Not everyone (myself included) has helpful kids to rely on.

We use leftover white rice, reheat it in a little milk, add a bit of brown sugar and cinnamon, and use it as a dessert. It's delicious, and cheap! I won't decorate for fall until mid to late September. I start out with plain pumpkins and fall leaves, then about 10 days before Halloween, I'll add in a few faux Jack-O-Lanterns, then take those away, and add in a few turkeys for Thanksgiving. I take jarred grape leaves, set up a sort of little "factory," add the spices and flavors I like to rice, and make them into stuffed grape leaves. I'm vegan (most of the year, and vegetarian the rest of the time). I take salmon and elevate it with lemon, butter, olive oil, salt and pepper, and dill. Probably most people do the same thing. I take carrots and cook them in a combination of crushed tomatoes, olive oil plus a lighter oil--like vegetable oil, onions, garlic, celery and parsley. It's the only way I can eat cooked carrots. You can leave the garlic out and it's still delicately scrumptious! I cook green beans in the same flavorings at times, and sometimes add potatoes to that. 😊❤

If you add a little bit of raw, unfiltered apple cider vinegar with the mother and allow it to sit on the counter at room temperature for a couple of hours it becomes more of a ferment than a pickled vegetable and is a probiotic. It will last weeks in the refrigerator. I do that with all my pickled vegetables.

Vegetables who used to be cheap in Europe have increase to price I have ever seen in my life so you have to find where it's cheap and it's not on the supermarket but in open-air market . You have to see the producer. Better for health better for you better for the planet and you bank account. Cheers

I keep Christmas decorations up until after the Feast of Epiphany on January 6. I'm like you - not into rushing the seasons. I think so many people do because the stores rush the seasons. The item I elevate the most is pasta. I love being creative with sauces, veggies and meats that I vary to put over cooked pasta in either a hot dish or a cold salad.

I decorate for fall around the last week of Sept. That way the things that are obviously for Halloween get to be displayed for at least a month.

For me it is milk, I started making my own yoghurts which is great for using up milk, in particular when they reduce milk with short shelf life left. I mix the yoghurts with all sorts of fresh fruits, including the often ignored blackberries which grow wild here, so I have my own wild summer berry yoghurts and they are super delicious much creamier and tastier than the store bought versions.

I make my own cheesy garlic bread at home. I buy a loaf of French bread at the store and then make my own garlic bread and put cheese on top. As for decorating I am in camp Emmy, I don't decorate until October because as far as I am concerned that is when fall starts. I live in California and some years it is still 85 on Halloween. LOL

Anyone that uses Monk Fruit instead of sugar can mix 1 cup monk fruit with 1/2 tsp blackstrap molasses and mix well to make brown sugar instead of buying the brown monk fruit.

what a great way to fix granola. I never thought of doing it in a crock pot. I also have several cases of those candles in my prepping closet. That looks really cute with the transfers. Very pretty :) I am in central Florida so it is way too hot for fall decorating. I take regular bags of pinto beans and turn it into copy cat Campbell's bean and bacon soup. It cost me about 5.00 and I got 16 pints of bean and bacon soup. I also went to my local meat market. They always have beautiful tomatoes from local farmers. I talked to the produce manager and asked if they had any mark down tomatoes that were about to go bad and be thrown away. She asked what I needed them for. I told her I wanted to cook them down into sauce and can it and I would be doing it in the next 2 days. I got 35 huge, beautiful tomatoes for 13.00. I got 16 pints of home canned tomato sauce and almost a full jar of dehydrated tomato powder from the skins. I took the skins off the tomatoes and laid them out on the dehydrator. I got a LOT for 13.00. And I was so proud of my bean and bacon soup. It tastes so much better than Campbell's soup. I paid 99 cents for the beans at Dollar tree before the price went to 1.25 and got the bacon on sale for 3.99 a package. and I already had several cans of tomato sauce that I had gotten from my local food pantry so that didn't cost me anything. Now I can pull out a jar of bean and bacon soup and fix a box of 99 cent Jiffy corn bread mix and have a fantastic meal plus enough left over for lunch the next day. Maybe add a salad if the guinea pig will share his romaine with me. He loves his lettuce so I may have to fight him for the salad lol. I am so happy I learned how to pressure can and dehydrate. I was lucky enough to find a dehydrator at a thrift store for under 20.00 and I got my presto canner for free after placing an add on freecycle wanting jars. The person gave me 50 brand new jars and lids. He also asked if I wanted his gently used Presto canner. He had gotten a glass stove and was afraid to use the heavy canner on it. I had been pricing presto canners and could not afford one. All I had to get was a weighted pressure gage. And I invested in a heating coil for my electric stove specially made to support the weight of canners and cast iron pans to keep electric stoves from buckling under the weight. I think I did pretty well with what I saved on canning my own food. I have been so blessed and I am so thankful. Canning has become a passion for me. I named my canner Ethel because we spend a lot of time together like Lucy and Ethel did. We have lots of grand canning adventures together. I take really good care of Ethel and she works hard for me. Sorry for the long post. I am just really proud of myself for being able to can and preserve my own food. A year ago I would have been too afraid to walk up to a stranger and ask about mark down produce and look what I ended up with. Sometime I will have to tell you how far I have come and why this is such a huge deal for me. Thank you so much for your videos. It has really opened my mind as to how I can save money and run my working pantry and prepping pantry. I really appreciate all the advise you give and I am starting to share what I learn on my channel and will start linking you when I share things I have learned from you. Thanks again. If you want to know more of my story and how far I have come, I will email you and share some of my journey with you. Blessings to you, Paul and Dixie :)

Always amazes me to see what creativity others dream up with items from Dollar Tree. Great recipes today, too. I love the small Cracker Barrel Mac & Cheese bowls but they're pricey and lately, not available. Last night I made my own using elbow macaroni, ham and broccoli, all bought at great sale prices, plus a package of Velvetta cheese sauce from DT. It made twice as much as the Cracker Barrel bowl at roughly 1/4 of the cost. Will for sure do it again.

All the recipes look delicious and can't wait to make granola and pasta sauce for sure. The decorated candle is perfect to add anywhere in the home. I usually decorate for Fall anytime mid-August on. I don't do as much decorating as I used to, but am anxious for the decor, colors and smells of Autumn.

I’m grateful that Paul is such a “gracious” taste tester 🤗 and, I hope his parents are doing well…..since I cook most meals from scratch, there’s not any one thing that’s elevated….everything tastes better when homemade….I make all homemade sauces, like Alfredo, sweet & sour, BBQ, taco, pizza. etc…..another thing I don’t buy is canned “cream of ……” soups, I make those from scratch….yesterday, I used canned organic tomato sauce to make homemade tomato soup….just add spices and milk or heavy cream….thanks for sharing your recipes….
