Yeah but it's not exposed to air like the pumpkin or mud, even though tnt is also not exposed to the air, but I guess mojang liked the idea of the enderman taking tnt and putting it accidentally on a redstone block💥

Endermen can’t pick up all blocks. There is a certain group of blocks that endermen can pick up, which includes tnt, pumpkins and mud but not diamond blocks

You are correct, they can survive 503 blocks. I most likely forgot to add "~" when testing it late at night... It makes sense too since they have 250 hearts. Thank you I did not pay enough attention to it.

It is, if you go beyond the top bedrock platform, you can build even more. It's also possible in survival mode, it is mostly used to make teleporting and navigating easier.
