Interesting! Does this mean that oils that contribute to bubbling like coconut oil have a more acidic pH than something like olive oil which makes a relatively weak lather?

I am quite confused. How is it that distilled water is used to dilute soaps and shampoos for pH testing? Should not the distilled water affect the pH? If the liquid detergent is alkaline, and the distilled water is slightly acidic, should it not get closer to neutral by adding water?

Distilled water should be neutral. Yes diluting would lower be pH but it won't make it acidic, it would just get closer to 7
