600g all purpose flour 5g yeast 350g water knead the dough until the surface is very smooth one hour of fermentation (room temperature) knead the fermented dough to knoch all the air out then you just follow the video: roll out the dough into a thin sheet oil brush add some chopped green onion add a little bit of salt (this bun should not be salty so don't add too much) fold the sheet as shown in the video cut the sheet as shown in the video( for the second one,you cut a piece out of the sheet and then you cut a smaller one and you repeat this 'one - smaller one' routine ) make the bun as shown in the video the second one is recommended because the buns turn out to be more beautiful leave the buns fermenting again for 20 minutes boil the water and steam the buns for 13-15 minutes job done
