Китайцы очень любят коллаген.Считают, для пожилых полезен. Поэтому и не жалеют достаточно недешевых приправ, и специй, и долгого томления на огне, топлива и главное - времени, что бы приготовить банальные кости с жилами....

In my meat eaters' country all this work isn't worth the candle. Nobody would be bothered to prepare such bones, they are used for broth to make soups.Our cooking is the only thing the Polish don't complain about Still, I love Uncle and Auntie.

Все эти сухожилия вкусны только пока горячие. Бульон от сильного кипения замыливается- становится водно-жировой эмульсией с плохим вкусом. Я бы томил при слабом кипении - дольше, но можно получить хороший вкусный бульон
