I love all of these realistic, achievable tips and meal ideas you are putting out. I grew up in a family that struggled paying for food. I wish my single, struggling mom had a resource and reassurance like this back then. You are doing good work!

Love the way you did this meal prep!! It makes meal prepping a lot more fun, and way less chance of mid-week burn-out to do it so there's room for sudden taste preferences. You can make so many dishes from pre-cooked chicken and ground beef, and customize it for each family member w/o a lot of extra effort. I love all these ideas, plus there's always chicken/beef quesadillas, taco salad, chicken salad, spaghetti, on an on with the ideas. Your family is blessed to have you in charge of the kitchen!

Grest job! 👌 I've been doing meal prep every Sunday for years now, makes meal time less stressful. 😀 I always make a big pot of soup, baked potatoes, pot of rice, pot of beans, cut up lots of veggies and salad stuff. Then we can throw together quite a few meals during the week so easily. 🤩

Awesome ideas Mindy! It's just me and my husband in this season of life but I work 12 hour shifts so ideas for easy, preprepped meals are always welcomed. I just have to remember to do it on a smaller scale.

I prep full length carrot and celery stalks. Put each in half gallon mason jar with an inch of water first day( dump water out after 2nd day) also same for romaine lettuce...do not chop..just remove end with plastic knife( to not rust). All so crispy and last a good 2 wks if not used up. Helps me not waste so much fresh veggies.

@@suefolsom1171 I dump on 2nd day...no need for more. It all crisps up and stays fresh. Have done brocc and cauliflower too but need to use up in couple days or rinse thru and drain again

I have reframed it in my mind as a goal to eat more at home and scale down our food budget. That mind shift has helped us with quarantine fatigue We still eat out about once a week. But, we are generally now at least a 5 days a week "home food" (my daughter's term) family. I also loosened up on the ingredients because a little white pasta or a cookie doesn't hurt our health nearly as much as eating more frequently. Another thing we do is "challenges" like home chicken nuggets vs. Chik-fil-a ones or we compete over who can make the best pizza toppings combo.

Pizzas on naan is a favorite at our house!! I admire you for looking at your calander and deciding to meal prep healthy food for your family instead of resorting to take out or frozen convenience foods. Well done!! If you want the best rice in the world, try it this way. In a heavy pot such as the one you use, heat a gulg of olive oil. Add chopped onion (half an onion or a whole one,,,your choice). Saute until translucent. Add basmati rice (however much you want according to package directions). Toast for a few moments and add however much chicken stock the package direction calls for liquid. Bring to a boil for a minute or so. Cover and bake at 350 for about 35 minutes. Best you will ever eat! I make up a big pot and eat off of it all week. I prefer to reheat in a small skillet, but it also works well being reheated in the microwave.

You can do those little naan pizzas in an air fryer too. Super fast and easy and. It gets brown and bubbly on top. Love these!

I've always made rice in the microwave, rice cooker, or Instant Pot. Is that covered pot you used a special type or can rice be made on the stove top in any covered pot?

I have always made rice on the stove top, and any covered pot will work. I have an off brand pressure cooker so it doesn't have a rice setting. I have thought about trying it but never have.
