A few meters away is the Congress of the State of Puebla, it is common to see congressmen and people from their work teams eating in this place... and a few years ago I had breakfast there with the then governor Melquiades Morales, what can I say, it is perhaps the governor, at least, most respected that Puebla has ever had... a very simple person and famous because... he knew the name of almost every person he saw (literally)... amazing ability The sauce they cover the "chanclas" with, is called "adobo"... and they are eaten with a fork and knife... but it's okay to get your fingers dirty... it's tastier that way... Puebla, along with the Port of Veracruz, are 4 times heroic cities and the most historic only behind the capital of the country... Puebla became the second most important city in New Spain, built exclusively for Spaniards... The "haute cuisine" that gave rise to mole and chiles en nogada and at least 20 other dishes, as well as the "dulces" that you tasted... is called convent cuisine, because they were created by the nuns of Puebla... The convents where mole and chiles en nogada were created, those considered "national dishes"... which are the convent of Santa Rosa and the Convent of Santa Mónica, today they are museums and can be visited, they still preserve the original kitchens of the XIX century.. "tortitas de Santa Clara " come... from the Convent of Santa Clara... and the sweet part is ground pumpkin seeds with sugar

hello guys! I am from Tlaxcala and i gotta tell you you made me hungry by just watching you eating all that food, you guys are still missing a lot of foods, not all food in México is tacos or quesadillas chicken pork or beef... there is also soups like menudo, pozole or mole de pipian, mole de olla, barbacoa de borrego and consome, tamales such as mixiotes or even blood tamales, and one if my favorites huitlacoche (corn mushrooms) usually eaten in tacos or quesadillas and thousand more things such as maguey worms or also ants... Ana pulque the elixir of the gods, I can go on and on and on. :)

Hello to you both this week! Another great video in Mexico, such interesting food. It's nice to see other cities in Mexico and how their gastronomy compares to Mexico City. Poblano food looks incredible! The mole, such a deep dark color, it looks like melted chocolate 😂🍫. I would love to taste that one day as I love sweet sauces! The giant sandwich at the end as well, holy smokes! That cheese looks so stringy, I've heard that the Oaxaca cheese is next level cheese, and they just pile it on top of that sandwich, what monster of a sandwich like you said! Shoutout to the nice restaurant owner and her family at the beginning, she looks so lovely and pleased that you guys loved the food. Keep up the awesome videos!

I’m glad that you guys tried the chanclas. When I was younger my aunts would only made them for Mexico’s Independence Day. They were my favorite dish of the day. Now we can all agree that Puebla is not just one of the prettiest states but also has great food 😊 I enjoyed your video because you took me back to my childhood with all these dishes that I haven’t had in years, except for the mole. I buy that one here in the states at Walmart but 🤫 😂😂 Awesome video and I wish you both the best!

Puebla has the same variety of "antojitos" or "garnachas" as CDMX... but it has more variety of local food... so it far surpasses CDMX... the most consumed variety of tacos in the world "el taco al pastor" has its origin in the "oriental taco" of Puebla... Not to mention "haute cuisine" the two most representative dishes of Mexican gastronomy... "mole" and "chile en nogada" were born here, in the convents of Puebla... the molotes the tostadas tacos árabes the tacos placeros the chalupas the chanclas the pelonas and others The cream (it is not sour cream, in fact it is even a little sweet) has some functions, softening the spiciness, neutralizing the excess salt or even neutralizing the heat a little... Here's the secret to why chicken is so "jiuce and fresh... and tender": In the central part of the country, chicken is consumed in stores that specialize in it called "pollerías." That chicken that you are consuming in the various dishes that you tasted in CDMX and Puebla, was most likely alive a day before... Thanks to the climate of central Mexico, the chicken is preserved at room temperature... In contrast, frozen chicken from supermarkets (as consumed in the USA) can be frozen for several days, this means that the cold burns the cells; This causes the flavor to be lost and meat that has been in a refrigerator for several days can begin to necrotize... That's why in this part of Mexico, "fresh" chicken, which means "chicken of the day," is consumed more, that is, it was slaughtered a few hours before it was consumed... In the southern part of Puebla, there are huge farms that supply the state of Puebla and the capital of the country (CDMX) with fresh chicken meat... the same goes for beef, vegetables... everything is literally fresh In Puebla, what you did when you bathed the molote with both sauces and the cream, we call it "flag" when we eat "memelas" or molotes and the person who serves asks "what sauce?" we say "flag" and they know that it should have both sauces... and cheese You know, because of the colors of the Mexican flag ... red sauce goes best with "antojitos" that contain beef or pork... green sauce with everything else It's a matter of taste... but if the cemita is ordered without spicy, but bathed with chipotle vinegar... it tastes much better... because that type of vinegar is sweet but not too spicy, the flavor it provides on the palate it is very good

Las cemitas del Carmen, sin duda, son muy ricas y atraen a mucho turista pero hay unas que se encuentran en el Mercado de Sabores, cerca del paseo bravo, se llaman Cemitas "As de Oros" mi opinión es que son muchisimo más ricas que las del Carmen y son bastante grandes, si algun día vuelven a venir a puebla, no duden de pasar ahí ¡no se arrepentiran!
