Samina, South Indian cuisines are almost same, use of tamarind along with mustard seeds,curry leaves and cumin seeds are common.Not only Hyderabad, Aandhra, Bengalore, Madras, Tamil Nado, and Kerala, they all use coconut and tamarind mostly.My mother was from Bengalore and she was expert in South Indian cooking.Now answer to your question why use of ‘khatta’? I tried to find answer but didn’t get any specific, the only point is sour fruits grow and the region is near Equator so mostly Summer season, sour foods help in digestion.Does it make sense?
