Hyderabadi kuchla hua gosht is a famous Hyderabadi mutton recipe made using coarsely minced mutton ground along with other ingredients and then fried
Method
1.Mutton - 1Kg coarsely ground
2.Ingredients required to be ground coarsely are
Ginger - 2 inches
Garlic cloves - 8
green chilies - 4
Cloves - 2
Cardamom - 1
Few mint and coriander leaves
Grind them coarsely and add to minced meat
3.Then add these ingredients to mutton
Red chili powder - 1 teaspoon
Salt - as required
Yogurt - 1 teaspoon
Turmeric powder - 1/2 teaspoon
Coriander powder - 1 teaspoon
Garam masala powder - 1 teaspoon
Mix them and marinate for an hour
4.In a pan heat oil - 3 tablespoon
To it add the marinated mutton and fry for few minutes then add half a cup of water and cook till meat is tender
5.When mutton turns tender fry it till crispy and add juice of half a lemon and fried onions of a big sized onion
6.Mix well and serve hot with da lrice or roti
Procedure:
1. Wash and strain the mutton pieces.
2. Add chopped coriander, whole green chillies chopped into small pieces, chopped mint leaves and salt.
3. Grind all these roughly. Run the mixie for 2 to 4 rounds.
4. Add turmeric powder to the ground mutton, add red chilli powder, ginger garlic paste and spices or garam masala powder.
5. Mix thoroughly and keep this aside for marination for about one hour.
6. After one hour, transfer the marinated mutton into a frying pan
7. Add 1 cup of water and close the lid
8. Cook on medium to low flame till the mutton gets tender and till the water dries up.
Add oil and stir fry till the mutton turns brown
