I believe he is using the FX3 here (a full frame camera not an action cam), on a gimbal on a harnessed hunting backpack, so kind of like building a steady cam but on the back not the front On his main channel he went through it all in a video called "This Crazy Bike Camera Rig"

Maybe to add a little more of a workout to their ride. Everyone has their thing. Maybe first aid kit inside. Water. Phone charger. Better stay prepared cuz a leisure ride nowadays can turn into anything really. Stay safe!
