Nikki, all my comfort shows ironically start with "G" and Gilmore Girls is the top one. I even use it as background noise on cleaning days and without even directly watching it, I know what episode it is just by dialogue. You being a Gilmore fan is one of the many things that drew me to your channel.

SAME! I do the exact same thing lol It's on as background noise and I can quote basically the whole show now 😂 I'm glad you can relate to that. It's so comforting 🍂 I did recently go back and rewatch it intentionally though, like actually watch instead of half-watch-half-listen like I normally do, and it was sooo nice. I'd forgotten some of the little details and even the scenery and funny background things. There's so much detail in the show and slowing down to really watch it has been such a treat. I also play a game now...I try to find the clown pillow in every episode. I didn't know that was a thing but it's fun because the pillow moves around a lot and it's always amusing to see it casually hanging out in the background of the scene lol What are you other favorite comfort shows that start with a G? I'm guessing Gossip Girl aaaand Grey's Anatomy? 😊 am I right?

I made a modified version due to a dietary restriction, and while it's still simmering away (added white beans for more protein/nutrients) I'm amazed with how much roasting intensified the flavor. What perfect timing! I had bought some butternut squash yesterday to make soup and was looking for the perfect recipe! This soup is absolutely delicious, this was the first time I took the time to roast vegetables before making a soup and wow, what a difference it made! The only tweak i made was adding some white beans for some added protein (can't take it at all). Thank you for always providing such easy to follow and delicious recipe's. I have been a vegan for 6.5 years and yours is the very first channel I found, and I watch your video's religiously every week. Thank you!

It all looks so good! As for the veggies in the oven ... I've just watched an Italian chef explaining how to best roast them (see link below). He said it's good to sprinkle some salt on them first because their water is released, the salt is absorbed and gives them more flavour. Adding oil first would seal their surface and that would make it more difficult for the veggies to absorb aromas. So after salting, he brushes each slice with little oil. This way he avoids the oil dripping on the baking sheet and smoking while the veggies are baking. He ads more oil after the cooking process. I tried it and found that to be a good piece of advice. I was too but this way is so much easier and there's something about doing less prep - like just getting it into the oven and starting the cooking process - that makes the recipe feel very doable to me. Not sure why that it is lol One tip: the squash should easily scoop away from he skin. If there's resistance, it's not done cooking 😊🎃 Hope you enjoy this recipe!

That soup looks delicious! My hubby brought two home and I'm scared to try the soup because I made a butternut squash soup with a frozen type and it turned out... stringy? Any idea why? It was kinda gross 😂 I'll probably try your soup though, every recipe I've tried of yours has turned out fantastic 😊 Also, this was such a great idea for a video. I miss Gilmore Girls. That's ready helpful and much appreciated 😊 As for the stringy squash, that happens when the squash is harvested out of season....either too early or too late. If it's frozen you won't be able to tell unfortunately, but that's usually why it's stringy. It's just not ripe enough or it's over ripe. I hope you enjoy this recipe is you make it at home!
