A regular windows vps, you can use it for whatever you want :) Not just FiveM

if i buy the qbcore platinum pro and set it up without the DDOS protection, will my server still be safe?... or is it a must to have DDOS protection?

If its home hosted, your IP would be on display and you could be ddosed without ddos protection. Ddos protection hides your IP and protects you from attacks. Alternatively, you could just get server hosting
