Vincent Adultman is a representation of the kind of person PC is drawn to: essentially a child masquerading as an adult. She takes care of people, adults who act like children and treat her like a mother, because she feels a constant need to help others to feel she has a sense of control, since she feels she lacks it in her own life. Bojack being the only one to see Vincent as 3 kids in a trenchcoat is a play on how he recognizes himself in Vincent and doesn't get what PC sees in him, jealous bc he's basically a Bojack stand-in caricaturized XD Plus it's to show how good PC is at convincing herself to believe things even if deep down she knows it's not real

Fun fact, as some people have pointed out online, there are small details in the Vincent episode that confirm that Vincent Adultman and Kevin are different people, and I love this basically confirmable theory since it helps the case that Bojack isn't right about anything and keeps this show's identity as a serious-silly show!
