Honestly sounds like valve stem seals on the GT500, you can do a leak down test as well to see if it’s bottom end or any other issues.

Yal a little advice about the smoking an yal it can be a thousand things but this can happen as this happen to me I got an 01 cobra an I know it doesn't use oil an has never had a leak an never smoked but one time it smoked a little after starting it up an quit but a couple of days later I started it up an whamo it puffed out a big gob of smoke an the next day it started breaking up bad so to the ford dealer an two weeks later when I picked it up the car not only got back to itself as to no smoking but ran perfect so the next day I went back to the dealer an talked to the tecks that worked on my car an he said sometimes when these cars smoke when you start the cobras up an quit but smoke again when you start them up again it's usually one or two coil packs going out an when you see the smoke well by that time the plugs are miss firing an faled so when they found the two coil packs going bad an replaced all the plugs the car has been perfect for a long time now.
