Chris, I have a suggestion for you, *please don't use word Saalan when in India*. Literally no one uses it and I have seen people getting confused when You say it. We don't say salaan for curry we simply say the name of the dish like we don't say roti and paneer/chicken/mutton ka saalan instead we say chicken roti or mutton roti or chicken curry and roti.
