Here's a little advice on smoking. Soak your wood chips for at least 24 hours. If the wood is dry it'll burn off and won't give off much smoke. Also use lump charcoal its much better than briquettes. Cowboys brand is a good choice. Get a chimney starter so you don't have to use starter fluid. Just put a couple of sheets of newspaper on the bottom, light it,wait 20 minutes,and you'll have a batch of charcoal ready for smoking. If you haven't had it before smoked bluefish is awesome. Let me know if you want the recipe for it.
