I cook Crab Matete a West Indian recipe
I share with you a traditional Caribbean recipe for crab matété. It's crab season and usually crabs are eaten between Easter and Pentecost. It really is a crab party. It is eaten most often on beaches and cooked in matété, calalou, dombrés and crabs, stuffed crabs and other recipes.
Here are the ingredients of the mate
1 kg of land crabs, preferably cleaned and seasoned the day before
500g long grain rice
150 g smoked bacon optional
3 cloves of garlic
4 branches of chives
4 sprigs of flat-leaf parsley
3 medium ripe tomatoes
1 tbsp turmeric
2 sprigs of fresh thyme
1 lime
2 vegetarian peppers
1 bay leaf
salt and pepper
a little oil for cooking
boiling water for cooking rice
